58 Hester Coffee was founded in mid 2024 by four friends with the goal of introducing third wave coffee to Riverside County.
People tend to struggle with choosing machines for their coffee carts but from the get go we've known what we wanted: a La Marzocco Linea Mini and a Mahlkoenig E65S GBW. We knew we needed a workhorse of a machine to produce drinks in rapid succession for catering events, and a grinder capable of showing off the full flavor of our medium-light roast. The GBW (Grind By Weight) feature of the grinder is crucial, in our opinion, for catering and busy farmers market days, and has saved us from weighing out our output every time we pull a shot.
As the machines were arriving, we had a buddy of ours build our first cart and it was huge. The first thing we learned is the cart must be able to fit in our car to make transportation easy. We had to rebuild it and ditch the metal that was making the cart too heavy for one person to handle. We ended up building our next cart, which has served us across countless catering events and pop-ups since.
